Lemongrass and Ginger Tea

This tea has only two ingredients, but the simple combination of lemongrass and ginger is incredible.

My mom had this on a trip to Bali.  She made it for us yesterday and we all loved it.  It’s very soothing served hot with a little honey.  You can keep it simmering on the stove for hours, replenishing the water when needed.  It smells so good.  It’s also refreshing iced with a squeeze of lemon.

Lemongrass and Ginger Tea

Serves 2

  • 2 cups water
  • 3 stalks lemongrass
  • 2-inch piece of ginger
  • honey and lemon, to taste

Remove the outer leaves of the lemongrass stalk.  Bruise it by hitting it with the back of a knife to release some of the fragrant oils.  Slice the heart into 1/4-inch pieces and slice the rest of the stalk into pieces that will fit in the pot.

Peel the ginger (a spoon works well).  Slice it into 1/4-inch pieces.

Add the lemongrass, ginger and water to a small saucepan and bring it to a slow boil.  Reduce the heat to simmer for at least 15 minutes.  Serve hot or cold, with honey or lemon.
